Easy Cheesy Broccoli Rice Soup with Ham

So delicious and creamy, this rich soup is guaranteed to deliver plenty of healthy calories and nutrients in every spoon! It's quick, almost mess-free, so it's perfect to try when days are definitely at a premium!


Easy cheesy broccoli rice soup with ham cooked in the slow cooker and served with a slice of bread.

INGREDIENTS

  • 1 (10.34 oz) can cream of mushroom soup (or cream of celery, or cream of chicken)

  • 1.5 cup milk (or cream, or canned evaporated milk)

  • 1.5 cups hot water

  • 1.5 cups diced ham

  • 1 cup diced potatoes

  • 3/4 cup shredded cheddar cheese

  • 1/3 cup uncooked instant rice

  • 1/2 cup thinly sliced carrots

  • 1/2 cup finely diced onions

  • 2 cups broccoli florettes

  • 1 tsp dried parsley (or 1 tbsp if fresh)

INSTRUCTIONS

  1. Mix all ingredients in a slow cooker.

  2. Stir to combine.

  3. Cover and cook on low for 3.5 hours, making sure to stir once every hour.


Enjoy and serve with a slice of bread if you'd like!
