Healthy Slow Cooker Vegetable Soup

Simple, tasty, and easy recipe. It's a fantastic way to get the veggies you need to be healthy everyday! Make a HUGE pot and enjoy it for days and days.


INGREDIENTS

  • 2.5 cups tomato sauce

  • 1.5 cups hot water

  • 1 cup chopped onion

  • 2 cups diced carrots

  • 1.5 cups diced unpeeled zucchini

  • 0.5 cup diced celery

  • 1.5 cups chopped greens (spinach, kale, etc.)

  • 1.5 cups corn

  • 3 cups shredded cabbage

  • 2 cups tomatoes, chopped and undrained

  • 1 tbsp sugar

  • 2 tsp dried parsley

  • 1/8 tsp black pepper

INSTRUCTIONS

  • Mix all ingredients in a slow cooker. Cover and cook on low for 6 to 8 hours, or until tender.

  • Mix well before serving.
