Quick & Healthy Chia Vanilla Banana Pudding

Looking for a quick, no-mess, and healthy pudding recipe? You've come to the right place! This pudding recipe is not only vegan-friendly, but is also packed with chia--which is rich omega-3's.


Why is omega-3 fatty acids good for you?According to healthline.com, omega-3s can:

  • fight depression and anxiety

  • improve eye health

  • promote brain health during pregnancy and early life

  • improve risk factors fr heart disease

  • reduce symptoms of ADHD in children

  • fight inflammation

  • fight autoimmune disease (such as Type 1 diabetes)


Chia vanilla banana pudding topped with sliced banana and sprinkled with cinnamon-sugar mix.

This recipe is such a quick and easy way to incorporate chia in your diet. I love it!


So, without further due, let's get to the recipe!


INGREDIENTS:

  • 1 ripe banana (mashed)

  • 2 cups milk (cow's, almond, soy, etc.)

  • 2 tbsp sugar

  • 1/2 tsp real vanilla

  • thin banana slices

  • cinnamon-sugar mix


INSTRUCTIONS:

  1. Place first 4 ingredients in a 2-pint container (with lid). Put the lid on and securely tighten.

  2. Shake container for about a minute. Make sure the ingredients are thoroughly mixed.

  3. Slowly open the container, being careful as to not spill.

  4. Top the pudding with the banana slices, then sprinkle with cinnamon-sugar mix.

  5. Refrigerate for at least 3 hours; preferably over night.


Serve and enjoy!
